Lighten the Load One Pan Brownies
(Makes 16 chewy and dense brownies)
People often think that healthy eating means never having a brownie. We disagree with that thinking. We believe that if you want to have a brownie (one brownie, not the whole pan) you should have a brownie using as few ingredients as possible and not a boxed mix that is full of preservatives.We also believe that when you deprive yourself of something you think about what you are not having and you'll eat more because you are feeling deprived. These are easy to make in your coach. This recipe is great to make with the kids or grandchildren. Use an aluminum square or glass baking pan. Share the recipe and brownies with your friends. Sometimes nothing is better than a brownie straight from the oven!
2 oz (2 squares) unsweetened chocolate
1/2 c (1 stick) unsalted butter
1 c sugar
2 large eggs, lightly beaten
1/2 tsp. vanilla extract
1/4 c all purpose flour
1/4 tsp salt
1 cup chopped nuts (optional)
325 degrees or _____ for convection oven. Lightly spray baking dish with Pam. Place chocolate and butter in baking dish. Melt in microwave in 10 second increments so you don't burn the chocolate. Stir in sugar. Mix in eggs and vanilla. Mix until smooth. Add flour, salt and nuts (if using).
Bake until toothpick comes out clean. 40 minutes or 20 minutes in convection oven.
