Tomato Mozzarella Salad

Serves: 5
A great source of Vitamin C and Calcium

3 lbs Roma tomatoes, cut into 1 1/2 inch pieces
8 oz mozzarella cheese cut into 1/2 inch pieces
1 cup fresh basil, torn
1/4 tsp salt
3 Tbsp extra virgin olive oil
1/4 tsp black pepper

Toss all ingredients in a large bowl until evenly mixed.

Chicken Salad Lettuce Wraps

Serves 4

2 cups grilled chicken strips,chopped
1 cup mandarin orange segments, drained
1 cup red grapefruit segments, grained
1/2 cup red pepper, diced
1/2 cup mayonnaise( low fat or regular)
1/4 cup unsalted dry roasted peanuts
2 Tbsp fresh parsley,chopped
4 large leaves of romaine lettuce

Mix all ingredients together except lettuce in a bowl.
Cover and refrigerate for 30 minutes.
Spoon mixture equally into four leaves of lettuce.
Fold gently as a wrap and serve.

Berry-Yogurt Popsicles

Vinaigrette:
1/3 cup packed brown sugar
1/3 cup cider vinegar
1 1/2 tablespoons vegetable oil
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

Slaw:
2 1/2 cups chopped Pink Lady or other sweet apple
1 (12-ounce) package broccoli slaw
1 (3-ounce) package dried tart cherries
2 tablespoons unsalted sunflower seed kernels

To prepare vinaigrette, combine first 5 ingredients in a small bowl, stirring well with a whisk.

Caprese Salad

Makes 4 servings.

1/2 pound fresh mozzarella cheese, sliced 1/4-inch thick (can use part-skim to reduce calories)
2 large ripe tomatoes, sliced 1/4-inch thick
1 cup fresh basil leaves
Coarse salt and freshly ground pepper
2 tablespoons drained capers (optional)
1/4 cup extra-virgin olive oil

In a circular design around the side of a serving plate, alternate fresh mozzarella slices on a large platter (or on individual plates if you are doing individual portions) with sliced tomatoes, overlapping for effect.

Apple Slaw

Vinaigrette:
